Homemade Green Gazpacho Recipe

Traditional green gazpacho is a tomato-based soup with garlic, onions, peppers, and cucumbers. This beautiful green variation leaves out the tomato, but retains the fresh taste of all the vegetables. This soup can be stored in the refrigerator for up to 2 days.

Cooking Time and Serve Estimate for Green Gazpacho Recipe

Serves 4.

Ingredients for making Green Gazpacho Recipe

2 peeled and cored cucumbers
1 stalk celery
2 green bell peppers
1 stalk scallion or spring onion
1 small clove garlic
½ litre vegetable stock / water
salt to taste
freshly ground pepper

For the garnish Green Gazpacho

a few leaves of sage and
chopped cucumber for the garnish

Method for preparing Green Gazpacho Recipe

1. Roughly chop the celery and bell peppers. In a blender, mix the cucumbers, celery, bell peppers, garlic and sage. Blend to a smooth purée along with the vegetable stock.

2. Add the salt and pepper and mix well. Add a little stock, if required to thin out the gazpacho.

3. Serve chilled garnished with the sage leaves and chopped cucumber.
