Homemade Herb Soup Recipe

A refreshing soup using fresh herbs and mild spices.

Cooking Time : 30 minutes.

Serves 6.

Ingredients for making Herb Soup Recipe

1 teacup finely chopped spinach
3 spring onions, finely chopped
1 tablespoon chopped coriander
6 mint leaves (optional)
1 level tablespoon plain flour (maida)
2 pinches nutmeg powder
6 black pepper, ground
3 tablespoons fresh cream
1 tablespoon butter
salt to taste

Method for preparing Herb Soup Recipe

1. Boil the spinach, onions, coriander and mint leaves in 5 teacups of water until soft.

2. Blend the mixture in a liquidiser and prepare a thick puree.

3. Melt the butter, add the flour and cook on a slow flame until froth appears, while stirring throughout.

4. Add the puree, ground spices and salt and simmer for 10 minutes.

5. Beat the cream and add to the soup.

6. Serve hot.
