Ingredients
  • Coral trout fillets: 4 x 180gm
  • Extra virgin olive oil: 1/4 to rub the fish
  • Freshly ground pepper: to taste to rub the fish
  • Sea Salt: to taste to rub the fish
Ingredients For The Sauce
  • Olive oil: 2 tablespoon
  • Onion, chopped: 1 large
  • Celery, chopped : 3/4 cup
  • Bell Pepper: 3/4 cup
  • Garlic: 3 cloves / use garlic press
  • Chicken stock: 1.5 cup
  • Tomato: 1 large
  • Scotch bonnet pepper: 1/4
  • Spring onions: 2-3
  • Worcestershire: 1 teaspoon
  • Bay leaf: 1
  • Thyme: 2-3 sprigs
  • Tomato paste: 1 tablespoon
  • Butter: 1 tablespoon
  • Parsley: 2 tablespoon
  • Salt: to taste
Instructions
1 Pour 2 tablespoons of olive oil into a heated skillet. Add the chopped onion, celery and bell pepper. Turn down the heat and saute for about 6 minutes, stirring occasionally.
2 Add chopped tomato, garlic, thyme, green onion, a spoonful of tomato paste, scotch bonnet pepper, Worcestershire sauce. Stir to combine.
3 Season with ground black pepper and add chicken stock or broth. Bring to a boil, reduce heat and simmer for about 20 minutes.
4 At the end add the butter, make sure it is completely melted into the sauce, add the parsley and remove the sauce from the heat.
5 Set the barbecue to a high temperature. If you are cooking a whole fish, use a sharp knife to make perpendicular cuts across the entire fish body. Apply a generous amount of sea salt, and then brush them with oil. Cook for four minutes on one side, then flip and continue cooking for three more minutes on the other side.
6 Plate, spooning over the sauce, twist of pepper and serve.
