One of the greatest side dishes in world cooking and probably the most effective way to use potatoes. A well-cooked classic French gratin can outshine even the main dish to which it is served as a side dish.

  • Potatoes: 600 g
  • Milk: 300 ml
  • 33% cream: 100 ml
  • Nutmeg: ½ teaspoon
  • Gruyere cheese: 100 g
  • Garlic: 4 cloves
  • Salt and ground black pepper: to taste
Instructions
1 Cut peeled potatoes into 2 to 3 mm slices. Keep the potatoes aside and don’t wash them. You need the starch to thicken the cream, not water.
2 Bring the milk and cream to a boil in a pot over medium-low heat.
3 Grate the cheese and add it to the mix.
4 Season with nutmeg, salt and pepper.
5 Add the potatoes, mix them and ensure that they are covered with the cream.
6 Lower the heat and let the mixture boil for eight to ten minutes. Stir it every now and then so it doesn’t stick to the bottom of the pot. Add the chopped cheese to the milk, potatoes, and cream, and take the pot off the heat.
7 Add the crushed garlic.
8 Pour the mixture into a deep mold and put to bake in an oven preheated to 120°C (or 248°F) degrees for twenty-five minutes.
9 To brown the gratin, place it on the top shelf of the oven and turn on the highest heat for about a minute.
10 Allow the potatoes to cool slightly before serving so that the cheese and cream sauce can thicken slightly.
