Mint ice cream is a great dessert on a hot day. Notes of mint and lemon make this ice cream refreshing.

Ingredients
  • Full fat milk: 2½ cups (500 ml.)
  • Sugar: 5 tablespoons
  • Corn flour: 1 tablespoon
  • Full fat milk powder: 1/4 cup
  • Fresh cream: ½ cup (100 grams)
  • Chopped mint: chopped mint
  • Lemon juice: 1 teaspoon
  • Green food colour: 2 to 3 drops
  • Mint essence: a few drops
Instructions
1. Dissolve the cornflour in 4 tablespoons of cold milk.
2. Combine the milk, sugar, cornflour solution and milk powder and bring to a boil. Simmer for 2 to 3 minutes while stirring continuously. Cool completely.
3. Add the cream, mint, lemon juice, mint essence, green food colour and mix well.
4. Pour into a shallow container cover and freeze till almost set.
5. Divide the mixture into 2 batches and churn each batch separately in a blender till it is smooth.
6. Transfer both batches into a shallow container. Cover and freeze till firm. Scoop and serve.
